Eating to keep warm, nourished, stay full, and not make a huge mess in the camper/cabin is an important part of every meal around here.
This past Sunday I stuck a whole chicken in the crockpot to cook all day, then cleaned the meat off the bones to use in meals throughout the week. This is one of those meals.
It’s AIP friendly, and even if you aren’t following any diet or health protocol, it’s still super delicious.
The One Pot Wonder
1 head of cabbage, sliced about 1/2 inch chunks
1 small bag of mini carrots (or about 4 large carrots sliced into 1 inch chunks)
1 large container of sliced mushrooms
1/2 the meat off of a whole chicken, cooked & shredded
3-4 cloves of garlic, pressed or diced
1 heaping spoonful of lard (we found locally rendered lard) OR 1 heaping spoonful of coconut oil
Sautee all of your veggies (and garlic) in the lard over medium heat until you reach your preferred texture of the cooked veggies. I like them soft, but not soggy. Then mix in your shredded chicken & stir until it is heated through.
Remove from heat, sprinkle with sea salt as desired & enjoy. Enjoy 2 helpings if you want. I did 🙂
